How can I build a 3D bars scatterplot (instead of points)?

I don't think that this is possible:
here are arguments why this is intentionally like this:

3D bar charts in JMP 

On the other hand: In Graph Builder, you can use hierarchical X Labels 

... or use X Group, Y Group and Page to add dimensions.

So, it's easy to show 5 and more dimensions :)

Using the Drop Lines and Drop Line Thickness options under the red triangle in the Scatterplot 3D Platform, one can get something close to your picture.

The colors are set by setting the Value Colors Column Property
