Since JMP 15, I can't find an easy way to generate many trend charts at once. In older days, I used the "Overlay Charts" which was super fast and convenient. For big datasets, it was the best tool : no control chart calculations, just line plots for all the variables on separate charts. Is there something to replace that capability in JMP 16?

You can use fit y by x,

it will generate one chart for each x with a few clicks.

If you go to 

     File=>Preferences=>Platforms=>Overlay

you can uncheck the 

     Use Graph Builder (default on)

default.PNG

and you will be able to go back to your old version of Overlay Plot

 

You can also stack your columns, and then use the "Dialog" button on the Graph Builder window, to use a traditional dialog box and specify a By column to get a separate graph for each of the stacked columns.
