Hi Eran,
as you probably already know, you can easily store Hebrew text information in a JMP data table, since Hebrew is in a Unicode character set and JMP fully supports Unicode: see https://community.jmp.com/t5/JMP-Blog/Welcome-to-the-family-Unicode-lightbulb/ba-p/41851, but JMP Text Explorer is currently supported for the following languages: English, German, Spanish, French, Italian, Chinese and Japanese.
However, you can still analyze text in other languages pretending you are analyzing English text and doing basic stuff like customizing Stop Words and Phrases.
Anyway, what you will miss is all the Stemming functionality, that is an important feature of text exploration: that issue has already been discussed in the Community by a Danish user and solved in the post: https://community.jmp.com/t5/Discussions/Extend-stemming-rules-with-a-new-language/m-p/51714
so I suggest to take a look at the answer and eventually continue that thread.
