Try using the 'Value Order Property' on the column containing your X values: http://www.jmp.com/support/help/Value_Ordering.shtml

Ian@JMP i right especially if you want to use the ordering both in a graph and in tables. Yet, if you just need to sort the order in a graph there is a more "on the fly" way of doing this. Try this short video JMP: How to Set the Order of Categorical Data in your Analysis and Graphs - YouTube
