Does your table have any specification limits set? Using Big Class as an example.

After opening and immediately trying to create Process Capability (no option available):

After adding specification limit column property to height column:

You can also do Capability Analysis from the distribution platform if you don't have the limits yet, good example Process Capability Analysis , see also this
