Interesting, Labels of Bar graphs have a command to adjust the font size, but point graph don't?
Graph builder bar chart data label control  -> interesting as well for other plot types?

Now it's 2025 - and we are working with JMP19 ...
Many new features, great improvments, ...

and a nostalgic feeling when you have to adjust the font settings via the preferences.

no change with this font size preference for the graph builder label

For Hover labels, use "Hover Label":
