**How does JMP define the factor interactions in extreme vertices mixture design? (say for 3 factors, or more, and the design was created using the DOE>Mixture Design menu)**

Not sure what you mean by this question. When you generate a mixture design in the Mixture Design platform the model of main effects and two-way interactions (non-linear blends) is saved as a model script in your data table.
