I want to set up an experiment involving a mixture of 3 components where the mixture itself varies at 3 levels. The set-up should also include a continuous parameter and a categorical parameter (2-levels). I really struggle to find a good way of approaching this in JMP.

Could you please provide a bit more clarity? Do the mixture components have constrained regions that you would like to examine? When you say that the mixture varies at 3 levels this could mean that you have three specific formulations to examine? If you are just examining 3 different formulations then perhaps you just have one categorical factor namely formulation A, B and C with the levels of the components specified for each. If you mean that you want to examine the components at different volumes then it would be the three mixture factors at their desired constrained regions and another factor = amount that would examine different amount of the specified three component formulation. Each case should be readily handled in the custom design platform.
